Made a jus with the juices, some sautéed mushroom and onion, roasted asparagus, and mashed potato. One of the best meals I’ve ever made.

    So am I correct that other than flavoring the extreme outer layer of the meat, the only seasoning that can actually penetrate in the sous vide bag is salt?

  7. Looks amazing! I made it over the weekend too for the first time and it was so bomb. I didn’t know about the butter thing and makes sense because we made a gravy with the juices and it was super salty but the meat wasn’t salty at all. I’ll have to try and do it again with out.

    I did this once when I first got my machine thinking I could skip adding butter when searing and I have never done it again. It’s a right of passage I guess?

    We’re happy you’re happy, OP, but the taste was despite the butter and garlic, not because of them.

    The temp ain’t high enough to make raw garlic tasty, and butter extracts fat soluble flavors from the meat, making it blander than it would have been if you hadn’t.
